This article is biased. Its aim is to urge the “Palestinianisation” of both discourse and awareness of daily and mundane particularities. Among the mundane are the two meals of hummus and falafel, which are interlinked with Palestinian cuisine. I believe that it is necessary to develop an understanding of them as a significant component of Palestinian identity, particularly because of Israeli colonialist attempts of appropriation. This article, however, does not delve into the Arab-Arab controversy around the intercountry identity of hummus, which is based in Lebanon, Syria, and Palestine.
